No more Leftovers

While helping out in the kitchen the chef told me we had a lot of potato leftovers and that he was trying out a new recipe. He added condiments and some cheese to make it flavorful, then baked it for 15 minutes until they were crispy.
Our chef is from Hong Kong, and in Cantonese, the humble sweet potato is called funchi. We named this creation “Funchi Cakes.” They were a hit, and we’ve been asked to make them again. We also had some leftover apple pieces, and with them we made applesauce.
I had a bit of a revelation—what I call “No More Leftovers.”
At 63, with my hair greying, I was starting to feel old. I had no idea the Lord would turn my 63 into 36.
We’ve been here for three months now, and when we first arrived, I got tired easily. There are lots of stairs to climb and no lifts. I thought, Gee whiz, how am I going to manage here? Yes, I had climbed Castle Hill before—but I almost expired doing it! The number of stairs I climb here on campus each day is about the same as climbing Castle Hill at least twice daily.
I’m not one to complain, but I did need a solution—sore legs, sore knees, wheezing.
The first thing I did was look at my diet and stopped eating sugar. It’s been a few months now, and I feel great. Lost a few love handles in the process.
The second thing I did was fast. Sandor and I made a choice to fast regularly. I’m so glad we’re doing this together. We’re also teaching this spiritual discipline to others here.
No sugar was the physical discipline; fasting was the spiritual. The Bible talks about fasting a lot.
My life was given a reboot—just like a computer that goes on the fritz.
In the last month:
I’ve written a book.
I’ve written a song.
I’m teaching.
I’m leading.
I’m discipling.
I’m evangelizing.
This is only the beginning. I feel new life in my bones.
This is what the Sovereign Lord says to these bones: I will make breath enter you, and you will come to life. I will attach tendons to you and make flesh come upon you and cover you with skin; I will put breath in you, and you will come to life. Then you will know that I am the Lord.’”
Ezekiel 37 : 5-6
With the breath of God, anything is possible.
